Chef Buck here and today we're
gonna mix us up a little bit of hummus
super easy to make super delicious don't
ever buy this stuff in the store again
because it's way too easy to make it
home now I use canned chickpeas you know
I tried doing the soaking overnight
thing a few years ago with some bagged
peas and it was just too much trouble
you know so don't use those kind of
beans you know use the cans taste the
same I put a little bit of salt in there
to taste you know and then you're gonna
go ahead and put some garlic now you
should put two cloves of garlic I'm
putting three but you ain't me so don't
put three in there is you ain't and
garlic freak like me probably now for
lemon juice 2 tablespoons I find that a
half a lemon squeeze the heck out of
that nuts play me get you some tahini 2
tablespoons of that if you don't have to
Heaney run out and get some adone even
buy 2 tablespoons of olive oil and then
a little bit of water not a lot of water
but I find I need a little bit of water
or else it doesn't get smooth enough for
me go ahead and throw the top on your
blender or processor and just go ahead
and work it up for a minute or two until
you get it to the consistency that you
like I like mine smooth so I blend it
for a little while
throw your finger in there and then if
it tastes alright you don't think you
need to add anything then you go ahead
and throw it on a plate or Bowl whatever
the heck you like I like to put a little
bit of olive oil on mine
sprinkle a little paprika for color you
put some chopped parsley or whatever
cilantro or something like that you know
makes it more appealing to the eye then
you know just serve it up with some pita
bread a little bit of carrot sticks or a
celery or you're just some crackers you
know now if you want to make some
roasted red pepper hummus you do exactly
the same thing except you add some
jarred red peppers used to jars because
they'll end up a lot better and don't
add any water because there'll be plenty
of water in these red
so go ahead and get it to the consistent
to you like give it a taste test you
know and if you need to add something go
ahead like on this particular batch you
know I thought it could use a little
more to him so I did that now you know
if you want to try that throw in some
extra oil or tahini or extra garlic in
there if you want to do the free garlic
thing like me you know you want to brave
it you know go ahead you know but you're
going to find the consistency and taste
that you like the main thing is never
ever go to the store and buy this stuff
again because it's too easy and too
delicious to make it home another great
thing to do with hummus is to make wraps
just throw a little bit of hummus on a
wrap spread it all out put you a little
bit of lettuce on there some cucumber
slices some green onion some fresh red
pepper whatever the heck you want you
know whatever whenever you got a taste
for then go ahead and wrap it up you can
saran wrap it throw it in your lunchbox
these things travel so well they're so
tasty and that's it you know don't buy
homes make your own damn homes
I shouldn't say them but I'm very
passionate about this so go ahead and
give it a try

I use canned beans because it's easy and—to my mind—taste the same (maybe even better). Add 2 cloves of garlic or perhaps even 3 if you're a garlic freak, but start with only 2 cloves because your friends and family will appreciate it. Add oil, tahini, lemon juice, and salt to taste. Water can be added and the amount really depends on the consistency of the hummus you're trying to make. Start with a ¼ cup and add more water if needed. Blend ingredients until desired chunkiness or smoothness is attained. Garnish with extra olive oil, paprika, parsley or cilantro, etc. There's no end to the types of hummus you can create. All manner of ingredients can be added to the basic recipe above. ROASTED RED PEPPERS make a tasty addition, especially those from a jar as they blend readily, but forego adding water since the peppers will have plenty. Also try adding cucumber, hot peppers, cumin, dill, curry, green onions, etc. The subtle flavor of the chick peas will pair nicely with most ingredients. Serve hummus with warm pita bread, pita chips, crackers, or raw fruit and vegetables. It's great in wraps and sandwiches. Hummus on a hamburger? Why not. It's inexpensive, easy to make, delicious, and a healthy dining choice...so it's a no-brainer, too. Bon appétit! The music is Jealousy by the Roy Block Orchestra.
